Escape to the Mediterranean for Hyatt Regency Sydney's Endless Summer

One of Sydney’s best rooftop bars, Zephyr Sky Bar, is launching a tantalizing Mediterranean summer offering.

Kicking off this November and rolling through the summer months, Hyatt Regency Sydney's Zephyr Sky Bar is transporting guests to some of the world's dreamiest holiday destinations, offering a 'Taste of the Mediterranean’ high above the bustling streets of the Sydney CBD.   

With elegant, revitalised décor inspired by stylish Mediterranean locales, a new vibrant summer cocktail menu curated to capture the essence of the coastal region and a delicious food menu to match, guests will be channeling a warm, care-free European summer in no time. 

Already a haven for locals and visitors alike due to Zephyr's unparallel Darling Harbour views and DJs playing every Friday and Saturday night, this summer guests can watch warm afternoons roll into spectacular sunsets and balmy nights whilst sipping on St Tropez Spritz and enjoying bites which capture the flavours of the Mediterranean.

Sailmaker Restaurant

We are thrilled to share Sydney's most indulgent and sustainable seafood experience has been re-imagined this summer at Hyatt Regency Sydney’s Sailmaker Restaurant – offering eco-conscious consumers a once-in-a-life-time dining opportunity. 

The newly elevated three-course Seafarer Dinner, steered by Executive Chef Sven Ullrich, is a continuation of Hyatt's philosophy of 'Food. Thoughtfully Sourced. Carefully Served,' and has been created with produce exclusively sourced from sustainable fisheries that practice eco-friendly farming or offer wild caught product. 

As part of the Seafarer Dinner, along with a Mediterranean buffet-style tapas table, guests can choose from a selection of six entrées and six mains, with new options including sustainably raised kingfish from Clean Seas – Spencer Gulf, SA, barramundi from the renowned Humpty Doo farm, NT - along with Fremantle octopus, Skull Island prawns and Hawkesbury River oysters. The dinner then surpasses expectation as a sweets trolley is brought around offering mouth-watering treats, from classics like chocolate brownie or Basque cheesecake, to enchanting flavours like pear-rhubarb cobbler, prepared and served table side!  

 

The Seafarer Dinner menu is available every Thursday, Friday, Saturday and Sunday evening from 6pm to 9:30pm  and is exceptional value at $89 per person.
